I‘ve been trying to incorporate more beans into my diet and have found that soup is the way I like them the best. They are especially good with rich beefy broth. This Instant Pot Beef Bean Soup cooks relatively quickly and requires no pre-soaking. It is hearty, savory and very filling. I like to make a big pot of this at the beginning of the week and have it for dinner most of the week. It reheats quickly and is tastes better the longer it sits in the fridge. Often, that is my whole dinner. I used heirloom beans for this recipe but you are welcome to use regular supermarket navy beans.
- 2 tablespoons olive oil
- 1 onion chopped
- 2 cloves of garlic minced
- 3 heaping tablespoons yeast flakes
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1 large or 2 medium carrots shredded
- 2 cups dried beans
- 1 - 1.5 lbs of stew meat cut into large chunks
- 4 cups of beef broth
- On the saute setting, saute onions in olive oil until translucent
- Add garlic and saute until fragrant - about 1 minutes
- Add the rest of the ingredients
- Cover pot and set to meat stew setting or 45 minutes
- Release pressure and serve
