
I bought a roast at the butcher that was made of chicken and pastrami and honestly not a huge hit. I didn’t have the heart to throw it out so I just froze it and thought I would use it for something. Another week I had a bunch of guests and had leftover meat and deli which I knew wasn’t going to get eaten so I put that in the freezer too. I was thinking of making a deli roll but I wanted something a bit different. I decided to combine it with spring roll wrappers and it was an instant hit. After defrosting all the meat, I added it to the food processor with some ketchup and mustard and then wrapped it in spring roll paper. I fried it and served it for dinner and everyone loved it. This recipe uses spring roll paper made from wheat flour, not rice flour.
- 2 lbs leftover deli meat
- 12 wheat spring roll wraps
- 2 tablespoons ketchup
- 2 tablespoons mustard
- Oil for frying
- Add deli meat to a food processor with ketchup and mustard
- Process until chunky
- Fill spring roll paper and roll - following the pictures above
- Fry on medium heat until golden brown on both sides
- Serve with extra mustard

Mustard works well or a mayo based sauce
