These Vegan Chocolate Mousse Pops are the type of dessert that will wow your guests. They are made out of three ingredients but they pack a huge amount of flavor and are a delicious treat. I made these using silikomart molds that I’ve seen used by professional pastry chefs and these were quite affordable on amazon. They are also super easy they were to use and clean and how they elevated simple ingredients into something fantastic. My plan is to develop more recipes using these molds in the future. Anyway, this recipe uses chocolate, coconut milk and coconut oil but you would think it to be much more complex just by the flavor and texture. The better quality chocolate you use, the better the dessert will be.
- 24 oz good quality chocolate
- 1 can coconut milk refrigerated for 24 hours
- 2 teaspoons coconut milk
- Separate cream from can of coconut milk - you should have about 1 cup
- Melt 16 oz chocolate with coconut milk on high in microwave safe bowl for 2 minutes
- Stir until chocolate is completely melted and refrigerate until hardened
- Add to a food processor and process until fluffy
- Add to popsicle molds and freeze
- In the meantime melt the remaining chocolate and coconut oil in the microwave and let cool
- When popsicles are frozen, remove from molds and dip into melted chocolate
- Let harden and store in the refrigerator until ready to serve
